Apple Cinnamon Waffles

Georgia is getting cooler, so I’m in the mood to bake. I like to make something special on Saturdays, so our family can have breakfast together. We often make gluten-free waffles, because my younger daughter is gluten-sensitive. Most of the time I use oat, rice, and corn flour, tapioca starch. Try these waffles, they are easy to make and they turn out really delicious! I love that they’re tender on the inside, little crispy on the edges, studded with warm cinnamon apples and a drizzle of maple syrup.

I use the DASH mini waffle maker. I love this waffle maker because the waffles never stick to it despite the fact that I cook them without oil. I know it takes longer to make waffles with just one side, but I love it anyway. You can use your favorite waffle maker to make these apple cinnamon waffles!

Ingredients
  

  • 150 g oat flour
  • 50 g corn flour
  • 15 g tapioca flour
  • 15 g flax seed meal
  • 1 tbsp cinnamon ground
  • 1 tsp baking soda
  • 15 g lemon juice
  • 125 g bananas mashed
  • 430 ml warm water
  • 1 apple large shredded

Method
 

  1. Mix all ingredients together except the apples. Mix well.
  2. Add shredded apples, mix together.
  3. Bake waffles according to the waffle maker instructions.
  4. Garnish with apples and ground cinnamon.
