While I was on a low FODMAP diet, I was craving pancakes. I needed to use ingredients that I could eat on a low FODMAP diet.

For this recipe, I decided to use simple ingredients that I had at home, such as green buckwheat, grounded into flour, cacao powder, maple syrup, flaxseed meal, and water. I am in love with these chocolate pancakes! They taste so delicious and so chocolatey.

Gluten-Free Vegan Chocolate Pancakes

Ingredients
  

  • 140 g green buckwheat groats
  • 20 g flaxseed meal
  • 40 g cocoa powder
  • 1/2 tsp baking soda
  • 100 g maple syrup
  • 300 ml water

Equipment

Method
 

  1. Grind buckwheat groats into flour.
  2. Combine all the ingredients together in a bowl.
  3. Blend the mixture with a mixer until smooth.
  4. Preheat a non-stick pan to medium heat.
  5. Cook on both sides.
