Roasted Cauliflower Steaks

Easy, crispy roasted cauliflower with lemon and smoked cashew sauce

Ingredients
  

Smoked cashew sauce
  • 1 cup cashew
  • 1 tbsp lemon juice
  • 1/2 tsp yeast
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/2 cup water
Cauliflower steaks
  • 1 head cauliflower
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper ground
  • 1/4 tsp smoked paprika
  • 1/2 tsp onion powdered
  • 1/2 tsp garlic powdered
  • 1/4 tsp oregano
  • 1/4 tsp turmeric

Method
 

Smoked cashew sauce
  1. Soak cashew 4-5 hours then drain and rinse
  2. Place all ingredients in a blender and blend until smooth
Cauliflower steaks
  1. Preheat oven to 350°F
  2. Remove green leaves from cauliflower and cut in half
  3. Cut cauliflower into slices about half an inch thick (or about 1.5 cm)
  4. Mix all spices in a bowl
  5. Rub both sides of cauliflower pieces with spices
  6. Place on silicone mat and bake about 10 minutes on one side, then flip and bake an additional 10 minutes, or until golden brown
