Roasted Cauliflower Steaks

Easy, crispy roasted cauliflower with lemon and smoked cashew sauce

Ingredients

Smoked cashew sauce

  • 1 cup cashew
  • 1/2 cup filtered water
  • 1 tbsp lemon juice
  • 1/2 tsp yeast
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt

Cauliflower steaks

  • 1 head cauliflower
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 tsp smoked paprika
  • 1/2 tsp powdered onion
  • 1/2 tsp powdered garlic
  • 1/4 tsp oregano
  • 1/4 tsp turmeric

Instructions

Smoked cashew sauce

  • Soak cashew 4-5 hours then drain and rinse
  • Place all ingredients in a blender and blend until smooth

Cauliflower steaks

  • Preheat oven to 350°F
  • Remove green leaves from cauliflower and cut in half
  • Cut cauliflower into slices about half an inch thick (or about 1.5 cm)
  • Mix all spices in a bowl
  • Rub both sides of cauliflower pieces with spices
  • Place on silicone mat and bake about 10 minutes on one side, then flip and bake an additional 10 minutes, or until golden brown
