Easy Vegan Chocolate Truffles

Ingredients
  

  • 10 Medjool dates large, or 15 regular dates
  • 3 tbsp almonds raw
  • 3 tbsp sunflower seeds
  • 1 1/2 tbsp cocoa powder raw
  • 1 tbsp cocoa nibs optional

Equipment

  • high-power blender

Method
 

  1. Place the nuts and seeds in a high-power blender, preferably with a tamper.
  2. Blend mixture until crushed into finely ground crumbles.
  3. Add dates and one tablespoon of cocoa powder and blend, using a tamper to push down or manually pushing down between blending.
  4. Scoop out the mixture and roll into small balls.
  5. Coat with more cocoa powder and cocoa nibs if desired.
  6. Store in the freezer in airtight container and let cool until ready to serve.
