Ingredients
  

  • 100 g baby arugula
  • 8 cherry tomatoes
  • ½ avocado sliced
  • 1 tbsp chopped red onion
  • 1 tbsp pine nuts
Salad Dressing
  • 40 g pine nut butter
  • 25 g lemon juice
  • 15 g maple syrup
  • ½ tsp granulated garlic
  • ½ tsp salt
  • ¼ tsp black pepper

Equipment

Method
 

  1. Place baby arugula leaves in a bowl. Top with cherry tomatoes, sliced avocado, and chopped onions. Sprinkle pine nuts on top.
  2. For the dressing, blend all ingredients in a small blender until well combined.
  3. Drizzle dressing over the salad and enjoy!
